Cheesecake is a classic dessert everyone loves because it’s creamy and comforting. But, it usually comes with a lot of carbs. This fluffy version is perfect for cutting back on carbs without sacrificing taste. Plus, it’s super easy to make—maybe even too easy!

We love our traditional Keto Cheesecake, sometimes with a chocolate ganache, but this fluff is perfect for when you want something delicious without making a whole cheesecake.

What’s in the Keto Cream Cheese Fluff?

This recipe is incredibly easy and low-carb:

  • Heavy whipping cream, cream cheese, powdered monk fruit, and vanilla extract make this dessert delicious.
  • Use a hand mixer, and in just 10 minutes, you’ll have a fluffy, creamy treat.

Tip: If it’s hot where you live, chill your mixing bowl to help the cream reach stiff peaks faster.

How Many Net Carbs in Keto Cheesecake Fluff?

This dessert has only 3 net carbs! I’m not sure of the exact serving size, but my husband and I split it, and it lasts two days. When there’s a small amount left, we usually play rock, paper, scissors to decide who gets it!

We include sugar alcohols in the nutrition info, and subtract them to calculate net carbs. Feel free to adjust based on your preferences. Remember, we’re all about being supportive here, so be kind if others do things differently.

You can make it sweeter by adding more of your preferred sweetener. We like it mildly sweet, but you can adjust it to your taste.

Making Keto Fluff Dairy-Free

If you’re looking to make this fluff dairy-free:

Coconut Cream: Swap the heavy cream with coconut cream. Chill a can of coconut milk for 24 hours, scoop out the thick cream on top, and whip it until it forms stiff peaks.

Cream Cheese: Use a dairy-free cream cheese alternative. There are plenty of options available at stores now!

Keep in mind, using dairy-free ingredients might slightly change the carb count, so calculate accordingly.

Ingredients

  • 1 cup heavy whipping cream

  • 8 ounces cream cheese

  • 1/2 cup powdered monkfruit

  • 1/2 teaspoon vanilla extract (optional)

Directions

  • In a cold mixing bowl, combine heavy whipping cream, cream cheese, sweetener, and vanilla extract. Use a hand mixer on high to beat the mixture until it thickens, about 5 minutes.
  • Store the fluff in an airtight container in the refrigerator for 3-4 days. Since it’s not self-stable, a little water may form around the fluff after a day or so. Don’t worry it’s still perfectly fine to eat and enjoy! 🙂
