Ingredients

  • 16 ounces macaroni noodles

  • 12 slices bacon coarsely chopped

  • 2 pound ground beef I use 90% lean

  • 1 cup onion finely chopped

  • 32 ounces tomato sauce canned

  • 0.5 cup ketchup

  • 2 tablespoon yellow mustard

  • 6 cups shredded cheddar cheese divided use

  • salt and pepper to taste

  • 2 tablespoon chopped parsley

  • assorted toppings such as pickles, tomatoes and shredded lettuce

  • cooking spray

Directions

  • Set the oven to 375 degrees Fahrenheit and spray an 8 inch or 2 quart baking dish with cooking spray.
  • Boil macaroni in salted water following the package instructions.
  • Put bacon on a large pan over high heat. Cook until it is brown and crispy for about 6-7 minutes.
  • Take out the bacon from skillet and set aside.
  • Pour off most of the bacon fat, leaving 2 teaspoons in the pan.
  • Add the ground beef to the pan while seasoning generously with pepper and salt till you find that it tastes well seasoned.
  • Cook the beef, breaking it into small pieces with a spatula until browned about 4-5 minutes.
  • Add the onion and cook for another 4-5 minutes or until onion has softened.
  • Add tomato sauce, ketchup, mustard and half of bacon into mixture. Stir so that beef becomes coated in sauce.
  • Drain the macaroni and add it to the beef mixture.
  • Add half of the cheddar cheese to the pan and stir until everything is combined and cheese is melted
  • Pour the pasta mixture into the prepared dish. Top with the remaining cheese.
  • Bake for 12 minutes until the cheese is melted.
  • Top with the reserved bacon and parsley, along with other toppings like diced tomatoes, shredded lettuce, and chopped pickles.
  • Let stand 5- 6 minutes, then serve.
