Easy Carnivore Cheesecake

Easy Carnivore Cheesecake

Cheesecake has always been one of my favorite desserts to enjoy after a satisfying meal. When I transitioned to a carnivore diet, desserts became few and far between, leaving me searching for options that aligned with my new lifestyle. Thankfully, it’s still possible to create a rich, creamy cheesecake that’s naturally sweet from lactose, adheres to carnivore principles, and tastes just as indulgent as the traditional version.

Over the years, I’ve developed a handful of low-carb cheesecake recipes, but this one has become a favorite because of its perfect balance of tangy sour cream and the natural sweetness from dairy. If you’re open to trying a “dirty carnivore” twist, you can add a few optional ingredients to enhance sweetness or even infuse it with cannabis for an extra layer of complexity. These additions allow you to indulge without straying too far from your goals. Plus, dirty carnivore treats are a great way to transition from a standard American diet to a cleaner carnivore lifestyle, offering comfort foods in a healthier, more aligned format.

Ingredients You’ll Need

To make this carnivore cheesecake, you’ll need:

  • Cream Cheese
  • Sour Cream
  • Eggs
  • Bovine Gelatin

If you’re open to a dirty carnivore version, consider adding:

  • Powdered Monk Fruit (for sweetness)
  • Vanilla Extract
  • Lemon Extract
  • Cheesecake Cultivar Kief (for cannabis infusion)

Tools You’ll Need

To prepare the cheesecake, gather the following equipment:

  • Large Mixing Bowl
  • Electric Hand Mixer
  • 10” Springform Pan (or smaller for a taller cheesecake)
  • Spatula
  • Tinfoil
  • A Pan for a Water Bath

Optional Substitutions

For those interested in cannabis infusion, you can substitute Cheesecake Cultivar Kief with other strains that pair well with the cheesecake’s flavors. Strains with vanilla or sugar-like terpenes and flavonoids work best. Blueberry Cheesecake, Strawberry Cheesecake, and Cheese are excellent options. If these strains aren’t available, trust your nose and taste buds to identify similar profiles that complement the dessert.

Frequently Asked Questions

Can I make this recipe without cannabis?

Absolutely! The recipe is just as delicious without cannabis. It’s a versatile treat that works with or without infusion, so you can adapt it based on your preference.

Why use cannabis in a carnivore recipe?

Cannabis can be a valuable tool for restoring balance in the body. When our system is in homeostasis, we don’t need cannabis because everything functions as it should. However, factors like stress, poor diet, environmental toxins, genetics, or health issues can disrupt this balance, leading to an endocannabinoid deficiency. Symptoms of this imbalance may include migraines, mood disorders, anxiety, depression, digestive problems, and even challenges with weight loss.

Using cannabis medicinally alongside a proper carnivore diet can help restore balance. It’s not a permanent fixture but rather a temporary aid to support your transition to full health. Think of it as a helper on your journey to achieving homeostasis. Once your body is balanced, you can phase out cannabis. Additionally, it’s a useful tool to have on hand if life’s challenges—like illness or stress—cause you to lose balance again.

Do I need to let the cheesecake set?

Yes! Allowing your cheesecake to set is a crucial step. Just like traditional cheesecakes, this one needs time to firm up. A minimum of 4 hours in the fridge is required, but letting it chill overnight is ideal for the best texture and flavor.

How do I store carnivore cheesecake?

Once your cheesecake has set, store it in a covered glass container in the refrigerator. This will help maintain its freshness.

How long does it last?

Your carnivore cheesecake will stay fresh for up to one week when stored in the fridge. If you prefer to keep it longer, you can freeze it for up to a month. However, be aware that freezing it beyond a month may alter its texture.

Why You’ll Love This Recipe

This carnivore cheesecake is a game-changer for anyone following a carnivore diet. Here’s why it’s worth making:

  • 3/4 Sour Cream

  • 3 Eggs

  • 1 Packet Kroger Unflavored Beef Gelatin

  • Optional Dirty Carnivore Ingredients (you DO NOT have to add)

  • 2/3 Cup Monk Fruit

  • 1 Teaspoon Vanilla Extract

  • 1 Teaspoon Lemon Extract

  • 1 Gram Cheesecake Kief Decarbed

Directions

  • In a large mixing bowl, combine the cream cheese, sour cream, and eggs. If you’re using any optional ingredients, add them to the bowl now.
  • Use a handheld mixer on medium speed to blend the mixture until it’s smooth and creamy.
  • Sprinkle the gelatin over the batter and gently fold it in until well incorporated.
  • Allow the cheesecake batter to rest while you preheat your oven to 320°F (160°C).
  • Prepare the springform pan by wrapping the bottom with aluminum foil to prevent water from seeping in during the baking process.
  • Fill a larger pan (for the water bath) with about 1½ inches of water.
  • Once the oven is preheated, pour the cheesecake batter into the prepared springform pan. Carefully place the pan into the water bath.
  • Bake the cheesecake for 1 hour and 30 minutes.
  • When baking is complete, turn off the oven, slightly open the oven door, and allow the cheesecake to cool gradually for about 15 minutes to prevent cracking.
  • Remove the cheesecake from the oven and let it cool completely on the countertop.
  • Transfer the cheesecake to the refrigerator and allow it to set for at least 4 hours, ideally overnight, uncovered.
