We are a divided house when it comes to doughnuts… I have never ever had a thing for them as an early morning treat or dessert; it’s always been impossible for me to love anything made from fried dough (the same goes for funnel cakes, too – what is wrong with me?!). My husband conversely enjoys eating doughnuts and although we hardly ever have them, he sometimes tells me that he wants Krispy Kreme. But there is one snag, the Krispy Kreme shop close by our home has been closed down some years ago.

It turns out there are countless copycat Krispy Kreme donut recipes online. Surprising, right? I went through many of them, and most had similar ingredients with small variations. I read the comments and reviews. Almost every recipe had mixed feedback: half the people said, “These taste exactly like Krispy Kreme!” while the other half said, “These taste nothing like Krispy Kreme.” The pressure was on.

Since I’m not a donut expert, I read through the tips and suggestions and came up with this recipe. I used instant yeast to keep the dough light and ensure a good rise and used water instead of milk to make a lean dough.

One Sunday morning, when everything fell into place – I woke up early and Joseph slept in – these donuts were ready on our kitchen counter by 8:30 am. I waited eagerly for my husband’s verdict… and he loved them! He said they were very close to Krispy Kreme donuts and was thrilled. Success!

He mentioned that he used to reheat cooled Krispy Kreme donuts in the microwave for 8 seconds, making them taste fresh from the conveyor belt, and the same worked for these donuts. So, those are the official reheating instructions.

Ingredients

For the Doughnuts:

  • 2¼ teaspoons instant yeast

  • ¾ cup warm water

  • ⅓ cup granulated sugar

  • ½ teaspoon salt

  • ¼ cup unsalted butter, at room temperature

  • 1 egg

  • 1 egg yolk

  • 1 teaspoon vanilla extract

  • 2½ to 3 cups all-purpose flour

  • 4 to 5 cups vegetable shortening, for frying

    For the Glaze:

  • 2 cups powdered sugar

  • ¼ cup water

  • 1½ teaspoons vanilla extract

Directions

  • Make the Doughnuts: Combine the yeast and water in the bowl of a stand mixer fitted with a dough hook. Let stand for 10 minutes.
  • Add the sugar, salt, butter, egg, egg yolk, vanilla extract and 2½ cups of the flour. Knead on very low speed until a dough begins to form.If the dough is quite sticky, add more flour a tablespoon at a time until a soft, tacky dough forms. The dough should clear the sides of the bowl, but not the bottom.
  • Finally Transfer the dough to a lightly oiled bowl, and cover tightly with plastic wrap and place in a warm, draft-free spot for 2 hours.
  • Softly press to deflate the dough, wrap in plastic wrap and refrigerate for at least 8 hours, or overnight.
  • On a floured surface, roll the dough out to ½-inch thick. Using a doughnut cutter (if you don’t have one, use one large and one small round cutter) dipped in flour, cut out the doughnuts and place them on a parchment-lined baking sheet. (You can roll any leftover dough scraps into balls for more doughnut holes.) Cover with a clean dish towel and let rest for 1 hour.
  • Line a large rimmed baking sheet with a double layer of paper towels and place a wire cooling rack on top.
  • Carefully place the doughnuts into the oil, making sure not to put too many in at once (I cooked them in three batches). Cook until they turn golden brown, about 1 minute on each side.Carefully remove the doughnuts from the oil and place on the cooling rack. Keep frying more doughnuts until they’re all done.
  • Make the Glaze: In a medium bowl, whisk together the powdered sugar, vanilla extract and water until smooth. Working one at a time, dip each doughnut into the glaze, Flip the doughnuts to coat the other side, and put them back on the cooling rack. Let the glaze set for about 12 minutes before serving.

Notes

  • My husband said that reheating leftover doughnuts for 10 seconds in the microwave is perfect!
