This keto frosty is super easy to make. You literally just blend the ice, coconut milk, cacao powder, almond butter, and monk fruit together. The trick to getting it just right is blending the ice first. It literally only takes 10 seconds, and it turns the ice into a snow-like consistency. In doing this, it allows the frosty to blend smoothly without the ice chunks and doesn’t cause it to melt from the blender’s heat.

Keto Frosty with Coconut Milk

I just love canned full-fat coconut milk-even better, coconut cream. It is thick and creamy, much like what you love about ice cream and a Wendy’s Frosty. If you don’t have coconut milk, you can always use almond milk or any other non-dairy milk. And if you are okay with dairy, heavy cream works great too and still keeps it keto!

Ingredients

  • 1 cup ice

  • 1/3 cup canned full fat coconut milk

  • 1 tablespoon unsweetened cacao powder

  • 1 tablespoon almond butter

  • 1 tablespoon monk fruit

Directions

  • In your high speed blender, blend the ice cubes until they are completely crushed and look like snow.
  • Add in the coconut milk, cacao powder, almond butter and monk fruit. Blend until completely smooth
  • Pour in a bowl and enjoy!

Notes

  • If your coconut milk has separated into solids and liquid in the can, just stir it together before using.
  • You can use other non-dairy milks, but I prefer coconut milk because it’s higher in fat.
  • If you’re not concerned about keeping it keto, you can use other sweeteners like date paste, maple syrup, coconut sugar, or regular sugar.
